Slow Cooker Meal

First I put breakfast pork chops and a few frozen chicken thighs in the slow cooker with a jar of Bartolli 4 cheese sauce. I let it cook until the meat was tender. I took out the meat and added part of a bag of frozen vegetables, a box of fresh, sliced mushrooms, and let it cook for a while as I shredded the meat. Then I added the meat, a can of cream of mushroom soup, a can of water and a bag of mixed greens, mostly spinach. I let it cook until everything was warm and bubbling.
I thought it was a good idea. It isn't wonderful, but it is low-carb food. I like adding the bag of green stuff.

Routine Lunch

This is a grilled deli ham and pepperjack cheese on low-carb bread with a side of slaw. I got this recipe for slaw from a Cuban lady who volunteered for me a long time ago. It is regular cole slaw with the addition of a can of red beans.
I consider this to be all right for a routine meal on my low-carb diet because I use low carb bread and the slaw is loaded with fiber.
It is really good if I can find a deli meat I like. The Kroger store in Murray, KY, has Starns smoked ham. That is my favorite. But WalMart has a smoked ham I just found that was good. I didn't get the name, just smoked ham. But I will be able to get it again. It isn't slick looking.

Low Carb Maintenance Brunch

The slice of cantaloupe and cherry tomatoes are from our garden.  The two fried eggs are covering a slice of low-carb, buttered bread. The slice of ham was a real discovery.  Smithfield hams are my favorite, but my husband and I have to really, really, want ham to buy an entire ham.  Smithfield has started marketing a chunk of ham.  Picnic hams aren't good to us, but this Smithfield chunk is every bit as good as the whole ham or half ham we'd previously gotten.

Food Today

I added strawberries to my oatmeal this morning.  I don't eat oatmeal very often because it isn't exactly low-carb, but I'm just so convinced it is healthy that when I'm not trying to lose weight (that would be low-carb, maintenance stage), I have it sometimes.  The strawberries I picked from my tire garden were wonderful.
Then I made a slaw from a cabbage and bell pepper that Larry picked from the garden.  We also have squash that he grew and turnip greens from the freezer that he grew and we put up.  I like it that we grow some of what we eat.
I made a chicken salad that was soupier than I thought it should be but it was very tasty.  I finally decided that it was because I had so many bell peppers that the liquid had come from the peppers.  If I had gotten too much mayonnaise in it, the extra liquid would have been cloudier.

Yea, Me!

I had my lab work done yesterday and got the results in the mail today.  My triglycerides were 63, my A1c 6.0, my cholesterol was 183.  The hdl was 72 and ldl 97. I actually have the paper in front of me so these numbers are accurate.
I've been trying to bring down my cholesterol.  Getting the total under 200 and the ldl under 100 was the goal.  The doctor didn't think I could do it because my triglycerides were already low.  But what I had done was leave off fiber because that's where the carbs were.  I am not a big fan of vegetables so it wasn't a hardship to forgo them. So I've tried to put salads and low-carb vegetables back in and have been using nut and seed flours for baking and bread.  I also tweaked my supplements after reading the efficacy of supplements site.
