Snacks

Atkins puts out a lot of low-carb products. The one in the middle is Larry's favorite, but I like it, too. The one on the left is new. It is chocolate-covered caramel. Three of the little treats are two carbs. The one on the right is the one I take with me to the hospital when I volunteer. I eat it for breakfast. The meal bars have more protein. I've tried a variety of Atkins products, but these are my favorites. The crackers in the background are Larry's idea of a snack...but he has started piling them with ham and cheese instead of eating half the box of just crackers.

Different but not Great

I've made toast pizza before. I used low-carb bread, Romano sauce, pepperoni, and mozzarella cheese.
Well, I accidentally thawed out barbecue sauce I'd made for chicken instead of Romano sauce. So I decided to go ahead and make the toast pizza using that. It was awfully soggy. It tasted good, but it wasn't finger food.
I won't make it again.

Poppers

Tiburon peppers are mildly hot. I split them, filled them with cream cheese, wrapped them in bacon, and then sprinkled shredded mild cheddar. I put them in a 400 degree oven until the bacon was crisp.
These are wonderful and absolutely on a low-carb diet.

I Wanted Pasta

I wanted pasta with our Easter meal. Bartoli puts out jars of sauce that are reasonably low-carb and quite good.  It takes eight minutes to cook the Dreamfields elbow macaroni.  Drain it and stir in the sauce.  It is quick, tasty, and also good as leftovers.

This nut bread is made with almond flour and has chipped up almonds in it.  It tastes as good as it looks:)

Low Carb Hot Fudge Sundae

Carb Smart ice cream and sugar-free microwave fudge topping from Smuckers...not as good as Baskin-Robbins, but better than a poke in the eye.

Crustless Quiche

My post that was titled Good Link has some very useful information.  I made this crustless quiche today.  It is a ham and spinach one, but I plan to try others, too.  They freeze, too.  My husband liked it, too.
I also found several recipes for creme brulee.  I love creme brulee.  I was looking at the nutrition information for several different ones when I noticed there were two different numbers for carbs...one was a little less than half as much as the other.  The smaller number was if liquid splenda was used.  The note said the granulated splenda has more carbs than the liquid because of the fillers.
I have looked for the liquid splenda in three stores and didn't find it.  Today I ordered some from Amazon.  When I see the packaging, I may recognize it on the shelf.  I thought it would be in a bottle.  But evidently the bottle is inside a box.  So it may be available locally.

Food

We had a turkey for Thanksgiving.  I put the left-overs in the freezer.  Yesterday I made gumbo with some of the turkey and broth and this morning I made a form of noodle soup with the rest.  The container with the yellow stuff, that's egg salad.  The brown and white stuff is sugar-free chocolate fudge pudding with  sweetened sour cream.  So I have food in the refrigerator that is on my diet.  I like to eat regularly, but I'm not a fan of cooking regularly.  So a variety of things in the refrigerator that are "on my diet" means I can eat well and do other things for several days.  The containers are uniform in size so they stack nicely in the cabinet and refrigerator:)
The only thing I still plan to do today is make a slaw.  I'm not wild about all the chopping, but it will be worth it.  The lovely cabbage is from Larry's garden.  I started to post a picture of it, but decided a cabbage is a cabbage.  He has grown several green ones and also red ones.  It has been so wet in the garden it is difficult to pick one.

Atkins Diet

The latest thing I've tried for my ham and cheese roll-ups involves less work than starting off buying a pack of pepper seeds.  I'm not saying I won't plant them again, just that trying to make a cream cheese spread has been disappointing until now.
I bought a jar of Mt. Olive diced jalapeno peppers and a jar on mild salsa.  I mixed about a spoon of each with some cream cheese and spread that on my ham and cheese roll ups.  Yes.  That is good enough to do again. And it's easy enough to do again often.
The next thing for my Atkins diet is a coke float.  I have a coke zero and carb smart ice cream (available at Kroger).
Kroger has a lot of things for my low-carb diet.  I recently found a jogurt that they put out under the name of carbmaster.  There were a lot of flavors available and is not only low-carb, but it's also low fat.  The low fat is not a necessity for a low carb diet, but they didn't offer a low-carb, high fat one.
