Tiburon peppers (moderately hot), split and seeded, filled with cream cheese, wrapped with bacon, sprinkled with shredded cheddar and baked for 45 minutes (or until the bacon is cooked) makes a great low-carb snack.  They are different when eaten cold, but some aspects are even better...the peppers are more noticeable:)
Make sure they are on foil to save yourself a cleaning horror.
